Azolla is an example of Matsu no Tsukasa's approach to its raw material, sake rice. Born in the rural village of Ryuo in Shiga Prefecture, this organic Junmai ginjo uses only Yamadanishiki rice grown by contract farmers in pesticide-free fields. Since no agricultural chemicals or synthetic fertilizers are used, the cultivation requires many laborious hours.
